Savory Coconut Stir-in


Sipping broth in place of tea or coffee is a great way to treat yourself. People like to ask me some of my favorite flavor combinations, and this one is definitely on the list!

Savory Coconut:

1 sweet potato (or about 2 cups butternut squash)

1/2 can full fat coconut milk

1 tsp ground turmeric

1/2 tsp curry powder

salt and pepper

1. Steam the sweet potato or butternut squash until soft.

2. Pour the sweet potato or squash into your blender along with about 1/4 cup of the cooking liquid. Add the remaining ingredients in a blender and blend until smooth.

3. Spoon into a mug of hot broth. It will dissolve and be more of a soup experience. Keep this in the fridge for about a week.
